Kolkata: Kolkatans will savour hundreds year old royal cuisine, extinct since the eclipse of the babu culture during British regime, in this puja as visiting ‘bonedi barir pujo' (traditional household) turns the flavour of the season.

“We have brought from the closet items like Maharani Dal, a must at zamindari households and East India Company babus with the original recipes and love to serve this on platter as revelers flock to our place in between rounds to Shovabazar rajbari and the Sabarno Choudhury pujas,” a spokesman of the cuisine initiative said.

“Also now eclipsed fusion food items like the Italian influenced Fish Florentine, which the English educated gentry had brought to vogue in the 19th century, will be introduced for the aficionado,”the spokesman from  Square 405 said.  Bhoomi frontman Surojit Chatterjee, having brought earthy smell to the lyrics and tune of contemporary Bengali music, said “If every city in the world can retain its heritage, in terms of architecture, food and wardrobe, why not Kolkata?”

Gushing how he strictly goes by a regimen of Bengali delicacies on at least one puja day,  from ‘begun bhaja' to ‘kopta' and ‘macher kalia' Surojit said, “But I am yet to taste the Mahaerani Dal. I hope to do this time.” “Kolkata has so much to offer in terms of centuries old delicacies, and artifacts and let's not blindly ape the cosmopolitan culture in every stride,” the leading band singer said.

“We are targeting people who will frequent our place in between hopping from one ‘mandap' to another,” the spoesman said.

The new Puja spread on a-la-carte, with dishes from north-west frontier and European will be available from Mahalaya till Vijaya Dashami.
