Chawal Ke Pakode- Pakode is loved by all in India and if they are made of leftover rice, it tastes more delicious. The leftover rice of afternoon can be used as evening snacks with this recipe.
Ingredients
2 cups cooked rice
1/2 cup gram flour
2 green chillies
chopped 1 onion
finely chopped 2 tsps coriander powder
1 tsp cumin powder
1/2 tsp red chilli powder
1/2 tsp fennel,
1/2 tsp ajwain
1/2 cup chopped fresh coriander leaves
Salt to taste
A pinch of asafetida
Oil for frying Method
Method
1. Mix together all the ingredients, except oil and make a firm dough using water as required.
2. Heat oil in a deep pan. Shape the dough into small balls and deep fry until golden.
3. Alternatively you can also steam the balls.
4. Serve hot with chutney and ketchup!

Rice roti with left over rice- Akki roti is rice based soft roti made with rice flour cumin seeds, onions, coriander leaves and green chillies. It is a popular Karnataka recipe. If you have rice left over you could make delicious roti for your breakfast.
Ingredients
Rice flour- 1 + 2/3 cup
Cooked Rice - 1 cup
cilantro - 1/4 bunch
onion - 1 big
Green chillies – 7
Cumin seeds - 1/2 tsp
Coconut grated - 1/4 cup
salt - for taste
oil
Method
1. Take a mixing bowl add rice flour, cooked rice paste, chopped onions, coriander leaves and grated coconut, mix well by drizzling little water into soft and spread able dough.
2. Take a plastic sheet or banana leaf grease with oil, take big ball sized dough and pat it into a circular disc, in between wet your hands in bowl of water.
3. Heat the tawa, when it is hot, place the circular disc over the tawa, drizzle some oil.
4. Cook it, till both the sides turns golden brown colour then remove it from tawa. Serve hot.

Rice vegetable cutlet with left over rice-This cutlet is prepared with left over rice. We can easily prepare this healthy cutlet with available ingredients in home. If rice is left over we don't have to worry and think what to do with rice. This cutlet provides as a healthy snack for evening.
Ingredients
Cooked rice - 2 cup.
Big onion -2.
Cilantro[Coriander leaves] - 1/2 bunch.
Carrot- 1.
Beetroot - 1/4.[small piece].
Potato -1.
Besan flour - 3 tsp.
Bread -4.
Ghee - 1tsp.
Green chillies - 5.
Chilli powder - 1tsp.
Salt - for taste.
Garam masala - 1/2 tsp.
Tomato juice - 4 tsp.
Corn flour - 2 tsp
Method
1. Take a big vessel, Add water, 1 tsp of ghee, knead well.
2. Add chopped onions, cilantro, grated carrots and beetroots, smashed potato, soaked bread, tomato juice, green chillies, chilli powder, besan flour, corn flour, salt ,garam masala and mix well.
3. Divide it into equal portions, and make a round ball and press it, in hands, at centre and level it.
4. When 5 or 6 are done, place it over a tawa.
5. Drizzle some oil over it, when it is cooked on one side, flip it.
6. Drizzle, some more oil over, it, when it is cooked and roasted on both the sides, remove from tawa and place it on a plate and serve hot. Tomato ketchup adds as a good combination to it.
