Assam
Every state in North-East region has different cuisine. But in general non-vegetarian food is consumed throughout the region. Assam has entirely different recipes and dishes.
Breakfast:
Pitha- Traditional Assamese home-made cake prepared with rice-flour and with various stuffing like grated coconut, jagerry etc.
Sira-Doi- Sira- It is flat pressed rice(called Chidwa in Hindi). It is soaked in warm water to soften it. The water is drained and it is served with yoghurt/dahi( called doi in Assamese) and gur(jaggery).
Lunch/Dinner:
Khar- The khar is a signature Assamese dish made with a key ingredient, called khar powder. Khar powder is nothing but naturally-prepared sodium bicarbonate. It is added to papaya or lentils or cabbage leaves/spinach as the base ingredient and the final dish is called Khar.
Rice and Dal- This is the principal dish of the state. The various accompanying dishes could be as follows.
