Braj region (Western U.P.)
Aditya Verman lists some of the dishes most famous and delicious dishes of Western Uttar Pradesh, also called Braj region.
Breakfast:
Bedai and Jalebi- You won't find it anywhere else in India. It is a form of hardened, mildly stuffed puri, topped with spicy potato curry (not sweetened or soured), a spoonful of pumpkin curry and a little curd. All that is eaten mixed in a dried leaf cup and it tastes ten times better in it.
Stuffed Parathas- Different forms of Stuffed Parathas with un-sweetened green chilly chutney and white home made butter. My favourite forms are Aloo, paneer and moong dal parathas.
Puri or Layered Paratha with Sabji- This is the most common and popular breakfast of the region.
The breakfast completes with different forms of sweet Halwa, mainly Suji and Gajar(Carrot).
Lunch/Dinner:
Thali- A simple thali consisting of sabji, dal, fluffed roti with ghee and rice.
Rice- All time favourites: Chole-rice, Rajma-rice, Kadi-rice.
